1 Julienne orange bell pepper
3 cups Baby Bella sliced mushrooms
1 Onion julienne
2 Carrots shredded
2 Stalks of celery julienne
1 Cup Sicilian olives
.5 Cup Tomato paste
2 jars Sal’s Red Gravy
2 tbsp Olive oil
4 Chicken thighs
6 Drumsticks
Directions
- Make sure to dry your chicken legs thoroughly, then heat a pan to medium and slightly brown each leg.
- Set aside the legs, then add the vegetables and sauté on low heat until soft. Add the tomato paste and cook down for 10 minutes.
- Add in your two jars of Sal’s red gravy and combine well with the tomato paste and vegetables, after add in your chicken legs and your cup of Sicilian olives.
- Cover the pot with tinfoil and set your oven to 325 degrees, and cook for 50 minutes.
