minutesPizza muffin? That sounds like a nickname I would call my teenage son. He is that age when all pizza is good pizza. Some of us may have never left that stage! I cannot hate on a Totino’s frozen pizza; it has saved my life on several occasions! My idea came from wanting a filling snack for my kids (and me) that is not as heavy or high in calories as typical pizza. These are great when you are running from the car line to soccer practice! I did a little research and was shocked when I discovered a similar recipe from 1988.
Here is a healthier option when your mouth is craving pizza but you cannot splurge on the real thing!

Makes 12 muffins
Ingredients
3/4 cup 3/4 whole wheat pastry flour
3/4 tsp. 3/4 baking powder
1 tbsp. 1 Sal & Judy’s Italian seasoning
1/4 tsp. 1/4 red pepper flakes
3/4 cup 3/4 skim milk
1 egg, slightly beaten
3/4 cup 3/4 part-skim mozzarella cheese, shredded
1/4 cup 1/4 grated Parmesan cheese
1/2 cup 1/2 artichoke hearts, diced
12 cups 12 spinach
2 cups 2 Sal & Judy Heart Smart Sauce
Directions
- Preheat the oven to 375 degrees. Grease a 12-cup mini-muffin pan.
- In a large bowl, whisk together the flour, baking powder, Italian seasoning, and red pepper flakes. Whisk in the milk and egg. Stir in the mozzarella, Parmesan and pepperoni; let stand for 10 minutes.
- Stir the batter and divide among the muffin cups. Bake until puffed and golden, about 10-15 minutes.
- Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.
